Savory Oats with Tofu and Brocolli
Inspired by Savory Oats from Thyme for Lunch, this is our go-to weekday breakfast.
Yields: 2 servings
Ingredients
- 8 oz (1/2 block) firm tofu, sliced in to 8 squares
- 1-1/4 cup old fashioned oats
- 3 cups cooked brocolli
- 2 cups vegetable broth (I use Better Than Bouillon's vegetable base)
- black salt
- tahini
- sriracha
Process
- cook the oats in veg. broth
- fry the tofu in a little bit of olive oil, one side for about 5 minutes
- flip the tofu and sprinkle a pinch of black salt on each piece. fry about 5 minutes.
- flip the tofu again to push the salt into the tofu slices
- split oats, tofu, and brocolli in to bowls.
- top with tahini and sriracha
