Savory Oats with Tofu and Brocolli

Inspired by Savory Oats from Thyme for Lunch, this is our go-to weekday breakfast.

Yields: 2 servings

Ingredients

  • 8 oz (1/2 block) firm tofu, sliced in to 8 squares
  • 1-1/4 cup old fashioned oats
  • 3 cups cooked brocolli
  • 2 cups vegetable broth (I use Better Than Bouillon's vegetable base)
  • black salt
  • tahini
  • sriracha

Process

  1. cook the oats in veg. broth
  2. fry the tofu in a little bit of olive oil, one side for about 5 minutes
  3. flip the tofu and sprinkle a pinch of black salt on each piece. fry about 5 minutes.
  4. flip the tofu again to push the salt into the tofu slices
  5. split oats, tofu, and brocolli in to bowls.
  6. top with tahini and sriracha
